Recipe Ingredients for Chicken Tortilla Casserole

1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 orange bell pepper, chopped
12 ounces chicken breast - precooked boneless, skinless, shredded
1 cup salsa, corn & black bean
2 ounces tortilla chips, baked
1 cup shredded mexican blend cheese
1 avocado, hass - cut into 16 slices

Recipe Directions for Chicken Tortilla Casserole

  1. Preheat the oven to 350 degrees. Coat an 8"x8" baking dish with cooking spray.

  2. Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, garlic and peppers. Cook, stirring occasionally, for 4 to 5 minutes, or until softened. Remove from the heat and stir in the chicken and 1/2 cup of the salsa.

  3. Line the bottom of the baking dish with half of the tortilla chips. Top with the chicken mixture, then spoon the remaining 1/2 cup salsa on top. Sprinkle with 1/2 cup of the cheese. Coarsely crumble the remaining chips over the top. Sprinkle with the remaining 1/2 cup of cheese. Transfer to the oven and bake for 18 to 20 minutes, or until the cheese melts and the filling is hot. Remove from the oven and let rest for 5 minutes. Cut into 4 servings and top each with 4 avocado slices.
