Delicious chicken soup with tortellini and zucchini

Recipe Ingredients for Chicken Tortellini Soup

1 1/2 quarts chicken stock
2 c water
2 pounds rotisserie chicken
1 carrot
1 c onion
1 celery stalk
1/2 tsp thyme
1 1/2 T canola oil
14 oz diced tomatoes
2 small zucchini, sliced
1 tsp basil
1/4 c cilantro
9 oz tortellini

Recipe Directions for Chicken Tortellini Soup

  1. Debone chicken reserving skin and bones.

  2. Combine chicken broth and water in a large pot. Add chicken bones and skin. Simmer for 30 minutes until bones have released their flavor.

  3. Pour broth mixture through a colinder to seperate broth from skin and bones. Reserve broth. Discard bones.

  4. Heat oil in bottom of the same pot. Add carrot, celery, and onion and saute until tender.

  5. Add broth and chicken to vegetables. Bring back to simmer.

  6. Add tortellini, tomatoes, zucchini, and basil and allow to simmer for 20 minutes until everything in tender.

  7. Remove from heat and add cilantro.
