Recipe Ingredients for chicken in tomatos/wine and smashed veg and spinach

280 g chicken thigh
215 g swede
177 g carrots
71 g parsnip
35 g onion
3 cloves garlic
1 tsp capers
100 g spinach
6 g flora light
1/2 tsp ground nutmeg
2 cloves garlic
400 g plum tomatos
250 ml red wine
1 tsp rosemary

Recipe Directions for chicken in tomatos/wine and smashed veg and spinach

  1. brown chicken then add onions and garlic and rosmary

  2. add a tiny bit of water so dosnt stick,

  3. add tomatos wine and capers and simmer till makes a thick sauce, loosen with water if get dry

  4. chop all the veg into chunks and boil,drain, season and smash with a potato masher till you get a chunky veg mash add flora, i use flora extra light but its not listed (10g flora light) and mix and keep warm

  5. add salt and nutmeg to spinach and tiny bit of water to wilt it in a pan.. once wilted drain in paper towel squeeze out excess water

  6. serve with the chicken and the sauce on 2 plate
