Chicken simmered in broth, diced tomatoes, and mushrooms served over brown/white rice.

Recipe Ingredients for Chicken & Tomatoes over rice

2 1/2 cups brown rice
2 1/2 cups white rice
24 ounce chicken breasts
3 tbls extra virgin olive oil
1 tbls cracked black pepper
1 tbls salt
10 large mushrooms, diced
28 ounce diced tomatoes
1 tbls italian seasoning
1 cup organic chicken broth

Recipe Directions for Chicken & Tomatoes over rice

  1. Brown chicken in oil in large pot until juices run clear. Sprinkle with salt and pepper.

  2. Add the rest of ingredients to the pot and simmer for 20 minutes.

  3. Cook rice mixture.

  4. Serve together.
