Recipe Ingredients for Chicken with tomatoes and olives

16 oz Chicken
1.5 cup cherry tomatoes Tomatoes, Red, Ripe
20 olives Manzanilla Pimiento Stuffed Olives
1 small Onions
1 1tsp Olive Oil

Recipe Directions for Chicken with tomatoes and olives

  1. Preheat oven on lowest setting. Heat the oil in a large non-stick skillet. Add the chicken, and cook on both side until brown and just cooked through. Remove from skillet and place on oven-proof plate; put in oven to keep warm.

  2. Add the onions to the skillet. Saute for 3-5 minutes until softened and beginning to brown. Add the tomatoes and olives and continue to cook for about 5 minutes, until the tomatoes release their juices.

  3. Spoon the tomato mixture over the chicken to serve.
