Recipe Ingredients for Chicken with tomatoes, mushrooms, and spinach

2 chicken breast, skinless, boneless
1 salt and pepper to taste
2 cups tomatoes, diced
1/4 cup tomato paste
1 tsp garlic
1/4 cup spinach
1 cup mushrooms, canned

Recipe Directions for Chicken with tomatoes, mushrooms, and spinach

  1. Season both sides of chicken breasts with salt and pepper.

  2. Heat cooking spray in a large skillet over medium-high heat.

  3. Place chicken in skillet; cook, turning once to brown each side.

  4. Remove chicken from pan, and set aside.

  5. Pour tomatoes into pan; cook for 1 minute, stirring constantly, and incorporating any brown bits from bottom of pan.

  6. Stir in paste, garlic, mushrooms, and spinach, and return chicken to pan.

  7. Cover, and reduce heat to medium.

  8. Simmer for 5 to 10 minutes, or until chicken is cooked through.
