Makes 4 servings



Great dish when you are running low on supplies. Pour over a cup of brown rice, with a side of black beans. :)

Recipe Ingredients for Chicken, Tomato and Veggie Bake

16 ounces Boneless, skinless chicken breast tenderloins
1 serving Tomato Sauce No Salt Added
1 cup Whole Kernel Corn
1 serving (Hill Country Fare) Cut Green Beans
32 grams Mild Diced Tomatoes and Green Chilies
1 medium Yellow Onions

Recipe Directions for Chicken, Tomato and Veggie Bake

  1. put about a half an inch of water in a baking dish (pyrex works well, or a cake pan). Pour the can of tomato sauce in the water, and mix it until it is spread evenly.

  2. Next, dice your onions and bell peppers. Place inside the tomato broth mix.

  3. Place defrosted chicken tenderloins in the mix. Pour your corn, green beans, and diced tomatoes and green chilis (I just use Rotel) over the chicken and in the water.

  4. Place in preheated 350 degree oven for an hour.

  5. *For additional use...you can use leftover tomato broth to cook your brown rice in, to help give it the same flavor as your chicken. Or you can choose to save it for another broth dish as needed. I try to reduce the tomato/water mix to a slightly runny gravy mix in order to pour over the chicken and rice. You can also choose to add cut up potatoes as well.
