Recipe Ingredients for Chicken and tomato spiced curry

3 1tsp Olive Oil
1 medium (2-1/2" dia) Onions
2 clove Garlic
1 tablespoon Curry Paste
1 tsp Vinegar red wine
450 grams Chicken, Breast, Meat Only
1 tbsp Tomato Paste
400 grams Italian Style Chopped Tomatoes
300 grams Vegetables, Mixed
3 sprigs Coriander Leaves

Recipe Directions for Chicken and tomato spiced curry

  1. Precook the chicken and leave to rest.

  2. heat oil and add chopped onions and crushed garlic until golden

  3. add curry paste and cook for 1 minute

  4. add the tomato puree, chopped tomatoes, vinegar and 200ml water to the frying pan.

  5. Bring to the boil and simmer uncovered for about 5 minutes

  6. add vegatables and cook for 5 minutes until the veg is tender

  7. stir in the chicken and simmer gently until chicken is piping hot.

  8. season to taste
