Hearty variation of chicken noodle soup

Recipe Ingredients for chicken, tomato & orzo soup

6 lbs diced tomatoes
6 lbs crushed tomatoes
8 lb low sodium chicken stock
1 lb onion
2 quarts skim milk
3 lbs chicken breast
2 oz kosher salt
2 tsp white pepper
3 tbs chopped garlic
3 lbs cooked orzo
1 lb roasted red pepper
1 tsp crushed red pepper

Recipe Directions for chicken, tomato & orzo soup

  1. Sweat diced onions and garlic until onions are translucent.

  2. Add diced & crushed tomatoes, chicken stock.

  3. Bring to a simmer add salt and pepper to taste.

  4. Cook over medium low heat for one hour, if the soup gets too thick while simmering add a little stock or water.

  5. Puree after an hour and slowly add milk while pureeing.

  6. Add cooked & diced chicken breast and simmer over low heat thirty minutes.

  7. While soup is cooking, make orzo according to directions on box ( 1 lb. Dry ).

  8. Rinse orzo once it is done cooking and add to soup.
