Another version of you-know-what on a shingle. One of those things you can make at the end of the month when you serve whatever you have either over noodles, with potatoes or on toast.

Recipe Ingredients for Chicken Tomato Open-faced Sandwiches

2 cups chicken thighs, meat only chopped
2 cups canned diced tomatoes (one 16 oz can)
4 cloves minced garlic (optional)
1 cup 1% cottage cheese
1/2 cup shredded cheddar
6 slices wheat bread
6 tbs country crock
3 tbsp garlic powder

Recipe Directions for Chicken Tomato Open-faced Sandwiches

  1. Cook the chicken thighs or use leftovers, then chop or shred the cooked meat.

  2. Drain the tomatoes and mix in minced garlic (optional). Use whatever tomatoes you want, Mexican, garlic, etc. Spread half the tomatoes in the bottom of a 9x9 glass baking dish. Spread chicken evenly over tomatoes, spread half the cheddar (or whatever cheese you want) over the chicken, the cottage cheese over that, layer the rest of the tomatoes over that and top with the rest of the cheese.

  3. Cover and bake for half an hour. Bake an addition 10 minutes or so uncovered to lightly brown the cheese. Remove from oven and let stand for 10 minutes.

  4. While you are letting the dish rest, toast your bread. Spread with country crock and sprinkle with garlic powder.

  5. With a slotted spoon (there will be excess juice) serve one spoonful on each piece of toast, about 3/4 cup each.
