Chicken with Tomato and Feta Cheese Sauce

Recipe Ingredients for Chicken with Tomato and Feta cheese sauce

2 tbsp olive oil
1/4 cup shallots, chopped
2 tsp oregano, dried
2 1/2 cups crushed tomatoes
8 oz chicken broth, low salt
1 cup feta cheese, crumbled
1/3 cup kalamata olives, chopped
12 oz chicken, skin on
2 oz spaghetti

Recipe Directions for Chicken with Tomato and Feta cheese sauce

heat oil in heavy large skillet over med high heat. add shallots and oregano and saute until shallots are tender, about 5 min. season chicken with salt and pepper. add chicken, skin side down, to skillet and saute until skin browns, about 5 mins. using tongs, turn chicken over. add tomatoes and broth and bring to boil. cover skillet. reduce heat to med low. simmer until chicken is just cooked through, about 10 min. transfer chicken to plate. boil sauce over high heat until thickened, about 5 minutes. mix in cheese and simmer until heated through, about 5 min.
