Makes 4 servings



5 Tbs olive oil, divided 1 to 1 1/4 lb chicken breast tenders salt and freshly ground pepper 1/4 c cider vinegar or white wine vinegar 1 Tbs snipped fresh thyme 1 tsp sugar 1 medium cucumber, cut in thin ribbons 2 tomatoes, sliced 1/2 c pitted green olives, halved and/or sliced 4 oz feta cheese (optional)

2 ounces Pork, Fresh, Loin, Tenderloin
1 Onions
1 Peppers, Sweet, Green
1 tbls Fat Free Sour Cream
1 tbls Sauce, Ready-to-serve, Salsa
1 Tortillas, Ready-to-bake Or -fry, Corn

Recipe Directions for Chicken, Tomato & Cucumber Dinner Salad

  1. 1. In large skillet heat 1 Tbs of the olive oil over medium heat. Lightly sprinkle chicken tenders with salt and pepper. Cook chicken in hot oil for 8 to 10 minutes, turning once, until no pink remains.

  2. 2. For vinaigrette, in screw top jar combine remaining oil, vinegar, thyme, sugar and 1/4 tsp each salt and pepper. Shake to combine.

  3. 3, On plates, arrange chicken,cucumber ribbons, sliced tomatoes, olives and feta cheese. Drizzle vinaigrette over salads. Makes 4 servings
