Really really easy, quick, can be cooked in a slow cooker and is very tasty

Recipe Ingredients for Chicken Tomato Casserole

500 g Chicken Thighs
1 Red pepper
400 g Chopped tomatoes
1 Onion
3 Garlic Cloves
175 ml Red Wine
175 ml Chicken Stock

Recipe Directions for Chicken Tomato Casserole

  1. Brown 4 small chicken thighs in a frying pan (with no oil), along with the onion

  2. Place in a casserole dish with the chopped up red pepper, crushed garlic, chicken stock, tinned tomatoes, 1 tbsp paprika, and the wine.

  3. Place in the oven on around 180C for 45mins

  4. Serve with rice

  5. Add salt and pepper to taste
