Chicken noodle soup with tofu and tomatoes

Recipe Ingredients for Chicken and tofu noodle soup

900 ml low sodium chicken broth
250 ml vegetable broth
1 cup water
1 1/2 cups chopped celery
1 1/2 cups sliced carrots
1 small onion
3/4 cup egg noodles
6 oz. boneless skinless chicken breast
85 grams extra firm tofu
2 cloves garlic
800 ml diced tomatoes

Recipe Directions for Chicken and tofu noodle soup

  1. Dice chicken and tofu and cook in skillet with chopped garlic cloves until chicken is cooked fully.

  2. In a soup pot, add both broths, water, diced tomatoes, celery, carrots, onion and egg noodles and bring to a boil.

  3. When noodles soften, add cooked chicken and tofu and let soup simmer.

  4. Add any desired spices.
