A delicious mexican way to eat chicken.. plus its healthy!

Recipe Ingredients for Chicken Tinga

1 cup, chopped or diced Chicken, Breast, Meat Only
3 tbsp Chipotle
1 tomato Tomatoes, Red, Ripe
2 small Onions
2 clove Garlic

Recipe Directions for Chicken Tinga

  1. cook the breast chicken in water with a pinch of salt, 1/4 onion and a garlic clove.

  2. When the chicken is done, place it appart and save some broth. Wait until it has cooled down and shred the chicken breast.

  3. Blend the tomatoes with half an onion, garlic clove, three chipotles in adobo sauce (pickled) and some of the chicken broth.

  4. Strain the sauce.

  5. Cut the rest of the onions and saute them with olive oil, add the sauce and a teaspoon of white vinegar, let it cook for 10 minutes over medium heat

  6. Add the chicken and cover the sauce pan, reduce the heat and let it simmer for 10 to 15 minutes. The sauce must be a little thick...
