Recipe Ingredients for Chicken Tikka Masala


For the Curry Paste:
2 cloves garlic
10 g ginger
1 tsp cayenne pepper
1 tbsp smoked paprika
2 tsp garam masala
1/2 tsp sea salt
2 tbsp peanut oil
2 tbsp tomato paste
2 Peppers, Hot Chili, Red
9 sprigs coriander
2 g desiccated coconut
2 tbsp ground almonds
1 tsp cumin seeds
1 tsp coriander seeds

For the Curry:
800 g chicken breasts
2 medium onions
1 Peppers, Hot Chili, Red
10 g ginger
9 sprigs coriander
1 tbsp peanut oil
5 g butter
1 pinch salt
1 pinch pepper
400 g tinned tomatoes
400 g light coconut milk

To serve:
200 g yoghurt
5 g Almonds Sliced
1 tsp lemon juice
4 cups cooked rice

Recipe Directions for Chicken Tikka Masala

  1. For the curry paste:

  2. Toast the cumin and coriander seeds on a dry pan then crush in a mortar and pestle.

  3. Process with all other ingredients.

  4. For the curry:

  5. Chop the, onion chili, ginger and coriander stalks and fry until softened in butter and oil.

  6. Add chicken and paste and mix everything together.

  7. Add the coconut milk, tomato and about 100g water.

  8. Season with salt and pepper.

  9. Simmer for approximately 20 minutes uncovered.

  10. Serve with lemon, yoghurt and rice
