Recipe Ingredients for Chicken Tikka Masala

12 oz chicken breasts, skinless, boneless
1/2 cup plain yogurt
6 tbsps butter
1 1/2 cups heavy whipping cream
28 oz diced tomatoes
1 large onion, diced
4 cloves garlic
1 oz fresh ginger
1 tsp cumin
3 tbsp garam masala
1 tsp ground coriander
1 tbsp salt
1 tbsp sugar
2 cups basmati rice

Recipe Directions for Chicken Tikka Masala

  1. Season chicken breasts with salt, coriander and cumin. Smother with yogurt and set chicken on a metal cooking rack over a foil lined baking sheet and place 10-12 inches below a broiler for 5-7 minutes per side. Watch carefully so as to not totally char the chicken but it should be slightly blackened around the edges. Remove from oven and set aside.

  2. Dice one large onion. Melt 2 tbsps of butter in a large skillet over medium-high heat. Toss in the onions and sautee until they are slightly browned. As the onions cook, mince the garlic. Next, cut off the outer skin and mince or grate a 1 or 2 inch chunk of fresh ginger. Add garlic and ginger to the onions and 1 tbsp of salt.

  3. Next add 3 tbsps of garam masala. Also, if you like it hot, chop up a serrano chili pepper and add that in now. Next add the diced tomatoes. Continue cooking and stirring to deglaze the bottom of the pan. Add 1 tbsp of sugar. Let mixture simmer for 5 minutes.

  4. Add 1 1/2 cups of heavy whipping cream to the mixture. Chop up the chicken into 1 inch chunks and add to the mixture. Add a handful of fresh chopped cilantro if you'd like and a health dose of cayenne pepper if you like it hot.

  5. To prepare the rice, to a rice cooker add the 2 cups of basmati rice, 4 tbsps of butter, 1 tsp of salt, 1 tbsp of ground tumeric and 4 cups of water. Cover, turn. Once rice is done, add a package of frozen peas for color. Stir in while the rice is still piping hot and the heat will cook the peas.
