Chicken cooked in tikka masala paste with peppers and mushrooms

Recipe Ingredients for Chicken tikka masala

3 1/2 oz chicken breast skinless and boneless, diced
30 grams onions, finely chopped
1 clove garlic, crushed
28 grams red pepper, chopped
28 grams green pepper, chopped
28 grams yellow pepper, chopped
30 grams mushrooms, thinly sliced
25 grams curry paste, Tikka Masala
100 grams passata
1 cup water
1 gram extra virgin olive oil

Recipe Directions for Chicken tikka masala

  1. Heat pan & add 3 sprays of extra virgin olive oil

  2. Add onion & garlic

  3. Saute for approx 3 mins

  4. Add diced chicken & curry paste & mix through

  5. Brown chicken on both sides

  6. Add passata & water & mix through

  7. When it starts to bubble, turn down heat & and simmer for 20 mins

  8. Add peppers & mushrooms and stir through

  9. Simmer for another 10 mins

  10. Serve with 1/2 Healthy Eating Naan
