4tbsp Vegetable Oil (you'll notice a lot of oil goes into these dishes but the book says its essential to develop the flavor of the spices:) 2 cups Curry Sauce 1 tsp paprika 1 tsp salt 1 level tsp chili powder pinch of red food coloring 1 tsp garam masala 1/2 tsp ground cumin 3 chicken fillets, freshly made into chicken tikka (recipe below... I used broiled chicken sprinkled with some turmeric and chili powder to save time) 6 tbsp single cream 1 tbsp chopped cilantro

512 oz Onions
64 tsp Ginger Root
80 clove Garlic
896 oz Water
128 oz Whole Tomatoes
128 tbsp Vegetable Oil, Canola
5.44 tbsp Tomato Paste
5.44 tbsp Turmeric
16 tsp Paprika
1 tsp Paprika
1 tsp Salt, Table
1 tsp Chili Powder
1 tsp Garam Masala
0.5 tsp Cumin
3 breast, bone and skin removed Chicken, Breast, Meat Only
6 tbsp Cream, Fluid, Heavy Whipping
1 serving, raw Cilantro
4 tbsp Vegetable Oil, Canola

Recipe Directions for Chicken Tikka Masala - from A Curry Secret

  1. Heat the oil in a large, deep frying pan, add the curry sauce, and bring to a boil.

  2. Without reducing the heat, add the paprika, salt, chili powder, and food coloring. (I omitted the food coloring)

  3. Cook for 5 minutes, stirring frequently, or until sauce thickens.

  4. Turn down the heat and add the garam masala and the cumin powder. Stir. Cook for three minutes.

  5. If using chicken, cut each piece of chicken into smaller pieces. Stir them with the cream into the sauce and simmer for a further 2-3 minutes. (or add mushrooms, paneer (indian cheese), or tofu if going veggie).

  6. Serve sprinkled with cilantro over basmati rice.
