Recipe Ingredients for Chicken Tikka Masala with Coriander Dressing

1000 grams Chicken, Thigh, Meat Only
25 g One Step Cooking Tikka Masala Curry Paste
3 container Greek Yogurt
70 grams Coriander
2 tsp Sugars, Granulated
20 slices (1" dia) Ginger Root
3 clove Garlic
4 tbsp Extra Virgin Olive Oil
2 fruit (2" dia) Limes
1 cup slices Cucumber

Recipe Directions for Chicken Tikka Masala with Coriander Dressing

  1. Preheat oven to 200 degrees C.

  2. Combine tikka masala paste with 1 cup (280g) yoghurt and season well. Coat the chicken in the marinade, then cover and refrigerate for 15 minutes.

  3. Place coriander stalks and leaves, sugar, ginger, garlic, olive oil and half the lime juice in a food processor and whiz until a coarse puree. Stir in remaining 1/2 cup (140g) yoghurt. Season. Set aside.

  4. Meanwhile, toss the cucumber with remaining lime juice. Season. Set aside.

  5. Place chicken in a baking dish with marinade and bake for 1 hour at 200 degrees C.

  6. Serve with coriander dressing and cucumber salad.
