Recipe Ingredients for Chicken - Chicken thighs with Italian spices

350 grams boneless, skinless chicken thigh
1 red onion
250 grams raw zuchinni
1 red bell pepper
350 grams ripe tomatoes
1/8 teaspoon salt
1/8 teaspoon pepper (or to taste)
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon rosemary
1/4 teaspoon thyme (or to taste in any combination of Italian spices)
1 whole lemon
1 tablespoon olive oil

Recipe Directions for Chicken - Chicken thighs with Italian spices

  1. Cut chicken in pieces. Slice the onion into grof half rings and the zuchinni into robust quartered chunks. Same with the pepper. Chop the tomatoes into chunks and put everything into an oven dish with lid.

  2. Sprinkle with salt, pepper and Italian herbs to taste. Sprinkle the olive oil on the ingredients.

  3. Wash the lemon and prick several holes in it with a fork. Nestle it into the casserole. Sprinkle with a bit more salt and pepper.

  4. Cover and cook in oven at 180 degrees C for 30-40 minutes. Remove lemon before serving.
