Similar to the turkey meatball business I've made before, but now with tasty chicken thighs. A one-pot hearty meal

Recipe Ingredients for Chicken Thighs and Cabbage Stew

3 tbsp extra virgin olive oil
1/2 medium onion, chopped
4 red potatoes
1 clove garlic, minced
4 chicken thighs, with bone and skin
1 head cabbage, roughly chopped
2/3 cup uncooked orzo
6 cups water
1 salt and pepper to taste

Recipe Directions for Chicken Thighs and Cabbage Stew

  1. Heat olive oil in pot over medium heat. Cook onions until they start to get translucent, then add in chopped up potatoes and minced garlic.

  2. Once potatoes begin to brown, add chicken thighs to the pot. Let everything cook together, and season as desired. Add a few cups of water, cover the pot and allow to simmer.

  3. Rinse and chop cabbage. Add to pot, in portions if necessary, allowing it to wilt some before adding more if it won't all fit in the pot at once. Add more water to the pot and give everything a good toss/stir.

  4. After all the cabbage has cooked down some, add a little more water, if necessary, and the uncooked orzo as well. Allow to bubble over the heat until the orzo is cooked.

  5. Suggestion: serve with grated parmesan cheese on top.
