Recipe Ingredients for Chicken Thigh Casserole

400 g chicken thighs
120 g zuccini
120 g red onion
50 g mushrooms
10 cloves garlic
1/4 c lemon juice
2/3 cup chicken broth
180 g Long Grain and Wild Rice
2 g thyme
2 g savory

Recipe Directions for Chicken Thigh Casserole

  1. Place thighs in bottom of casserole and season to taste (Club House Balsamic Chicken mix 1/4 pf package 20 calories) Salt, pepper and herbs

  2. Add thinly sliced zuccini, red onion, mushrooms and garlic on top of chicken

  3. Squeeze half a lemon over all the veggies

  4. Add 2/3 c chicken broth

  5. Place in the oven at 350 covered with foil for 45 minutes

  6. Serve with rice
