Recipe Ingredients for Chicken thigh & asparagus vegetable stir-fry

12 oz chicken thighs
1 cup chopped onion
1 cup fresh asparagus
3/4 cup raw carrots
1/3 cup red bell pepper
2 cloves minced garlic
1 tablespoon peanut oil
1/4 cup soy sauce
1 fresh ground pepper to taste
1/4 cup chicken broth
1/2 teaspoon corn starch

Recipe Directions for Chicken thigh & asparagus vegetable stir-fry

  1. Chop vegetables bite-sized and set aside.

  2. Cut chicken thighs into bite-sized pieces.

  3. Heat large skillet medium high and add peanut oil.

  4. Saute chicken until brown on the outside.

  5. Add vegetables, stir three minutes.

  6. Add soy sauce and chicken broth to skillet.

  7. Mix corn starch with 1/3 cup cold water and stir. Slowly add corn starch-water mix into skillet liquids while stirring to thicken. Simmer as required for chicken to be done through. Serve over noodles or with rices as desired.
