Soak dried shiitake mushrooms in lukewarm water for 3 hours, then chop into small pieces. Dice chicken. Chop the rest of the vegetables.

Recipe Ingredients for Chicken Thai Soup

1 cup, chopped or diced Chicken, Breast, Meat Only
2 cup Baby Bok Choy
1 cup No Sauce Baby Lima Beans
1 serving Dried Seaweed - Fueru Wakame
3 mushroom Mushrooms, Shiitake, Dried
1 cup, chopped Carrots
1 cup Thai Soup
1 cup, chopped Onions, Spring Or Scallions
1/2 cup Brussels Sprouts

Recipe Directions for Chicken Thai Soup

Use a little coconut oil (or other vegetable oil) to brown the chicken, then add the vegetables. Brown a little. Add tin of thai soup. Bring to boil, then add water 2 cups at a time, leaving it to cook for awhile on Low heat. You can add vegetable/chicken stock if you like, and some instant noodles in your own bowl ... just take note of the calories, as you would any other addition to the soup. Enjoy!
