Delicious Thai red curry chicken with coconut milk and basil. It's one of our favorite Thai dishes.

Recipe Ingredients for Chicken in Thai Red Sauce

14 oz light coconut milk
1/2 T red curry paste (more to taste)
1 T soy sauce or fish sauce
1 1/2 T brown sugar
1 T lime juice
1/3 c fresh basil, coarsely chopped
2 tsp olive oil
1 lb boneless skinless chicken breast halves, cut in 1" cubes

Recipe Directions for Chicken in Thai Red Sauce

  1. In a medium saucepan, combine coconut milk and red curry paste.

  2. Bring to a boil and let simmer for 5 minutes.

  3. Add soy sauce, brown sugar, and lime juice.

  4. Stir, let simmer for 5 more minutes.

  5. Add basil leaves; remove from heat.

  6. In a large nonstick skillet or wok, heat olive oil over medium high heat.

  7. When oil is hot, add chicken.

  8. Cook until no longer pink in the middle (around 7 minutes).

  9. Add vegetables (sliced carrots, red pepper, broccoli, onion, etc) and saute until wilted.

  10. Add curry sauce to chicken mixture.

  11. Simmer for 5 minutes over low heat.

  12. Serve over rice.
