Chicken Tetrazzini Recipe

A delicious way to serve left over chicken, and feel completely satisfied afterward. Serve a green salad, baked tomatoes or green beans as a side dish.

Recipe Ingredients for Chicken Tetrazzini

8 oz uncooked spaghetti
1/4 cup onion, finely chopped
8 oz mushrooms, sliced
1 garlic clove, minced
1 tbsp butter
3 tbsp cornstarch
14 1/2 oz (1 can) chicken broth
12 oz (1 can) milk, canned, evaporated, nonfat
2 1/2 cups chicken breast, cubed
1/2 tsp salt, seasoned
1 dash pepper
2 tbsp parmesan cheese
1/4 tsp paprika

Recipe Directions for Chicken Tetrazzini

  1. Cook spaghetti according to package directions.

  2. In a large saucepan, saute onion, mushrooms and garlic until tender. Combine cornstarch and broth until smooth; stir into the onion mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to low. Add the milk; cook and stir for 2-3 minutes. Stir in the spaghetti, chicken, seasoned salt and pepper.

  3. Transfer to an 8 inch square bakiing dish, coated with cooking spray. Cover and bake at 350 degrees for 20 minutes. Uncover; sprinkle with parmesan cheese and paprika. Bake 5-10 minutes longer or until heated through.
