Recipe from Amy Quinby. Switched half and half to milk.

Recipe Ingredients for Chicken Tetrazzine

2 tblsp unsalted butter
1/2 cup chopped yellow onion
2 cloves garlic
8 ounces mushrooms, sliced
3 tblsp dry white wine
1/4 cup all purpose flour
1 cup peas
1 cup chicken stock
1 1/2 cups milk
3/4 tsp salt
1/8 tsp pepper
1/2 cup freshly grated parmesan cheese
3 cups chopped chicken (I use a rotisserie one)
8 ounces whole wheat spaghetti

Recipe Directions for Chicken Tetrazzine

Preheat oven to 350. In medium saucepan, melt 2 tblsp butter, sauté onion, garlic, and mushrooms for about 5 minutes, till tender. With slotted spoon, remove vegetables to a plate. Add remaining 2 tblsp butter and blend in flour (I think I used about 3 more tblsp butter, b/c I didn?t feel there was a lot in the pan). Add wine while whisking. Add stock, cream, salt and pepper, blending till smooth. Add in cheese to thicken. Return veggies to pan and mix. Add cooked spaghetti and chicken and mix thoroughly. Pam spray a 9X13 pan. Bake 30 min. Sprinkle w/ remaining cheese and cook for about 10-15 minutes more.
