Easy chicken stirfry with a simple teriyaki style sauce

Recipe Ingredients for Chicken Teriyaki Stir fry over rice

1/4 cup soy sauce
1 cup water
1/2 tsp ground ginger
1/2 tsp garlic powder
5 1/2 tbsp brown sugar
4 tbsp water
2 tbsp corn starch
1 tbsp margarine
1/2 lb mushrooms
1 large onion
1 lb chicken breast
500 g frozen vegetables
1/2 cup pineapple
2 cups instant brown rice

Recipe Directions for Chicken Teriyaki Stir fry over rice

  1. combine soy sauce, cup of water, ginger, garlic powder and brown sugar in a saucepan.

  2. Stir occassionally over medium heat until boiling.

  3. Stir corn starch into 4 tbsp of water and mix until smooth, then pour into sauce and stir well.

  4. Stir frequently until boiling and thickened. Set aside.

  5. Melt half of the margarine in a fry pan and add chicken. Cook until no longer pink and then set aside.

  6. Melt the rest of the margarine in the fry pan and saute sliced mushrooms and chopped onion about 5 minutes.

  7. Add frozen vegetables and cook about 5 minutes.

  8. Add chicken and pineapple and pour sauce over mixture.

  9. Stir well and cook an additional 5 minutes.

  10. Serve over rice.
