Recipe Ingredients for Chicken Taquitos

3 oz cream cheese
2 oz green salsa
1 T lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t garlic powder
3 T chopped cilantro (optional)
2 T sliced green onions (optional)
16 oz shredded cooked chicken
8 oz grated pepper jack cheese
16 corn tortillas

Recipe Directions for Chicken Taquitos

  1. Heat cream cheese in microwave for 20-30 seconds to make it easy to stir. Add the green salsa, lime juice, cumin, chili powder, onion powder, and garlic powder. Mix well. Add chicken (I grilled 2 boneless skinless chicken breasts and then shredded it) and cheese.

  2. Heat tortillas 20-40 seconds in microwave to make them easy to roll. If they start cracking or tearing when you roll them, heat them up longer.

  3. Place chicken mixture towards the bottom of the tortilla and roll.

  4. Place on a cookie sheet (covered with foil and sprayed with cooking spray) and bake at 425 degrees for 15-25 minutes until the are crispy and edges are browning.
