This is a resubmitted version of "Bubbamom's" recipe, but the nutrition facts come out correctly on this. The difference is, I didn't put "shredded" after the chicken and it counted it correctly.

Recipe Ingredients for Chicken Tamale Pie (Slow Cooker Recipe)

3/4 cup cornmeal
1 cup chicken broth
1 1/2 chicken breast
1 tsp chili powder
1/2 tsp cumin
16 oz salsa
1 cup corn
1/4 cup sliced olives
2 oz cheddar cheese

Recipe Directions for Chicken Tamale Pie (Slow Cooker Recipe)

  1. In a large bowl mix together cornmeal and broth; let sit for 5 minutes.

  2. Stir in chicken, chili powder, cumin, salsa, corn and olives.

  3. Pour into a 3 1/2 quart slow cooker.

  4. Cover and cook on low for 5-7 hours, or until set.

  5. Sprinkle cheese over top, cover and cook an additional 5 minutes, or until cheese melts.
