sweet and flavoursome tomatoe based stew

Recipe Ingredients for Chicken Tagine

200 g chickpeas
800 g tinned tomatoes
750 g chicken
3 tsp ground coriander
3 tsp cumin
3 tsp cinnamon
200 g broccoli
200 g aubergine
200 g courgette
300 g carrots
3 tbsp sunflower oil

Recipe Directions for Chicken Tagine

  1. fry off the chicken in the oil until browned

  2. fry off the spices in a big saucepan for 30seconds

  3. add the tomatoes and chickpeas

  4. add the veg and leave to simmer until the veg are nearly cooked

  5. add the chicken and leave to bubble for another 10mins

  6. serve with couscous and fresh coriander
