Little chicken tacos filled with fresh salsa

Recipe Ingredients for Chicken Taco's

1 1/2 lbs chicken breasts (boneless-skinless)
1 onion ( chopped)
2 tomatoes (diced)
1 cup corn (frozen)
1 bell pepper (small-chopped)
3 tbs cilantro (chopped)
1/2 tbsp cumin
1/8 tsp Salt
1/4 tsp pepper
1 cup mozzarella cheese
9 corn tortillas
2 tbs canola oil

Recipe Directions for Chicken Taco's

  1. Chop and dice all produce. Mix together. Add spice and stir. Place in microwave for 1 minute. Set aside.

  2. Grill chicken breasts on Foreman Grill. Cook for 5 or six minutes each side-if frozen. 3 minutes each side if fresh. (a little over done, or crispy, gives it more flavor) Cut up into small pieces, about the size of peas. Cover and set aside.

  3. Place oil in small skillet. Heat and heat the tortillas one at a time, place on paper towel. Blot any grease.

  4. Place small amount of cheese on tortilla, some chicken, couple tablespoons of salsa. Serve as soon as tortilla is filled. I usually serve two at a time.
