Recipe Ingredients for Chicken Taco Soup

1 1/2 lb boneless, skinless chicken breast
4 tsp chicken boullion
1 1/4 oz McCormick's Taco Seasoning
15 oz diced tomatos
1 1/2 cup Rotel, mild
15 oz corn
1 large onion, chopped
6 cloves garlic, chopped
1 tsp salt
3 tbsp olive oil

Recipe Directions for Chicken Taco Soup

  1. Lightly brown onions and garlic in oil in stock pot.

  2. Add all other ingredients and simmer for 30 minutes.

  3. Remove and shred chicken, return to pot.

  4. Simmer another 15 minutes minimum.

  5. Add fresh lime just and avocado (optional).
