A family favorite from my husband's side. You could find a healthier option than Doritos but that's the way my mother-in-law made it so that's how the hubby insists I make it, too! This recipe is gluten-free as written but as always, be sure to check all labels.

Recipe Ingredients for Chicken Taco Salad

2 cup,+chopped+or+diced chicken thighs
1 cup shredded cheddar cheese
15 ounces dark red kidney beans, drained and rinsed
2 cups iceberg lettuce
1 large tomato, chopped
1/2 white onion, chopped
2 tsp. minced garlic
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp sea salt
1/4 tsp ground red pepper
1/4 cup balsamic vinegar
1/4 cup olive oil
1/8 cup water
1 tsp lemon juice
1 tsp worcestershire sauce
6 drops tabasco
4 ounces doritos (cool ranch)
1 tsp lemon juice

Recipe Directions for Chicken Taco Salad

  1. Boil chicken and shred into pieces when cool. Retain a few tablespoons of broth. In large skillet, put broth, shredded chicken and approx. 1 tbsp onion. Add minced garlic, salt, cumin, chili powder, and ground red pepper to taste. Cook until onions are slightly soft, then remove from heat and allow to cool.

  2. Dressing: In a food processor, blend: oil, vinegar, water, 1 tsp. garlic, 1 tbsp. onion, lemon juice, worcestershire sauce, tabasco, and spices (cumin, chili powder, red pepper, salt) to taste.

  3. In a large bowl, combine chips, lettuce, tomato, cheese, kidney beans, chicken. Pour dressing over salad and combine. Or keep dressing separate and add to each individual portion.
