A great easy recipe when you're short on time. Wedges of lettuce with ff dressing make this a super meal.

Recipe Ingredients for Chicken Taco Filling

3 oz. boneless, skinless chicken breasts
2 c. chunky salsa
15 oz. cooked black beans
1 c. corn, frozen
1/2 c. chopped onion
1/2 c. chopped bell pepper
1 1/2 T. diced green chilies

Recipe Directions for Chicken Taco Filling

  1. Place all ingredients in a slow cooker. Add salt, pepper and pepper to taste.

  2. Cook on high for 4 to 6 hours.

  3. This can be used in whole wheat tortillas or with spanish rice.

  4. Fat-free sour cream and low-fat cheese may be added but nutritional info needs to be added, too.

  5. 1 cup equals 1 serving.
