Alternative to tacos/fajitas using reduced sodium taco seasoning and lower fat dairy products.

Recipe Ingredients for Chicken Taco-Fajitas

1 pound boneless skinless chicken breast, chopped
1 1/2 cup black beans (1 can)
1 onion, chopped
1 bell pepper, chopped
235 grams wheat tortillas (5 fajita size)
2 tsp McCormick Reduced Sodium Taco Seasoning
1/4 cup light sour cream
1/2 cup salsa
1/2 cup low fat cheddar cheese, shredded

Recipe Directions for Chicken Taco-Fajitas

  1. Brown chicken breast in a skillet until juices run clear. Drain. Add taco mix and prepare with water per package directions.

  2. Drain beans and rinse well. Transfer to saucepan and add enough water to cover about 2/3 of the beans. Heat through, then keep warm. Drain before serving.

  3. Saute onion and bell pepper in a few drops of canola oil (or cooking spray) in a skillet until cooked to your liking.

  4. Heat tortillas either in the microwave or one by one in a skillet.

  5. To serve: Place all ingredients on tortillas, wrap, eat, enjoy.
