2 boneless skinless chicken breasts, cubed 2 pounds sweet potatoes, peeled and cut into spears (about 6 medium sweet potatoes) 1/2 pound white button mushrooms, thinly sliced (about 3 cups) 1 cup chopped carrots 1 medium onion, peeled and diced 4 cloves garlic, peeled (about 4 tsp crushed garlic or 1 tsp garlic powder) 2 cup low-sodium, fat-free chicken broth 2 teaspoons chopped fresh rosemary, or 1/2 teaspoon dried rosemary 1/2 teaspoon freshly ground pepper 1 1/2 tablespoons white-wine vinegar

16 oz Chicken
6 medium raw Sweet Potato
3 cup, pieces or slices Mushrooms
1 medium (2-1/2" dia) Onions
4 clove Garlic
2 cup, Light & Fat Free Chicken Broth 50% Less Sodium
0.17 tablespoon Rosemary
1/2 tsp Pepper, Black
1 1/2 tbsp White Wine Vinegar, Organic

Recipe Directions for Chicken & Sweet Potato Stew

  1. Place cubed chicken, sweet potatoes, mushrooms, onions, garlic, chicken broth, rosemary, and pepper in a 6-quart slow cooker; stir to combine.

  2. Put the lid on and cook on low until the potatoes are tender, about 5 hours.

  3. Before serving, stir in vinegar. Enjoy!
