Easy mildly spiced chicken curry.

Recipe Ingredients for Chicken, Sweet Potato and Coconut Curry

1 tbsp sunflower oil
1 tsp curry paste
2 chicken breast
1 medium sweet potato
4 tbsp red lentils
300 ml chicken stock
400 ml lite coconut milk
175 g peas

Recipe Directions for Chicken, Sweet Potato and Coconut Curry

  1. Heat the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute. Add the chicken, sweet potatoes (chopped into bite size pieces) and lentils then stir to coat in the paste. Pour in the stock and coconut milk. Bring to the boil and then simmer for 15-20 minutes.

  2. Tip in the peas, bring back to the boil and then simmer for a further 4-5 minutes. Season to taste before serving.
