Mildly spiced Use 1 can 400ml light coconut milk

Recipe Ingredients for Chicken, sweet potato and coconut curry

1 tblsp sunflower oil
2 teaspoons curry paste
300 g chicken breast
300 g sweet potato
6 tblsp Red Lentils
300 ml chicken stock
280 g Coconut
175 g frozen peas

Recipe Directions for Chicken, sweet potato and coconut curry

  1. Cut chicken and sweet potato into bit size pieces.

  2. Heat the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute. Add the chicken, sweet potatoes and lentils and stir to coat in the paste, then pour in the stock and coconut milk. Bring to the boil, then simmer for 15 minutes.

  3. Tip in the peas, bring back to the boil and simmer for a further 4-5 minutes. Season to taste.
