Sweet & savory southwest-inspired lunch bowl

Recipe Ingredients for Chicken & sweet potato bowl

1 cup brown rice
1 tbsp extra virgin olive oil
3/4 cup black beans
1/2 cup yams, diced
1/4 cup plantains, sliced
1/2 cup chicken, diced
1/4 cup salsa

Recipe Directions for Chicken & sweet potato bowl

  1. Cook brown rice as directed.

  2. Heat oven to 375 and grease baking pan with olive oil.

  3. Place sweet potato, beans, and plantains in pan, add seasoning, and bake for 20 minutes.

  4. Toss in chicken, bake for an additional 10 minutes, or until sweet potatoes are tender.

  5. Serve over rice and garnish with salsa. Make it even better with lime juice and cilantro!
