Modified from Campbell's soup recipe

Recipe Ingredients for Chicken with Sundried Tomatoes

2 tbsp olive oil
1/2 pound chicken thighs , meat only
1/2 cup shallots , finely chopped
10 oz can 98% fat free cream of mushroom soup
3/4 cup water
1/4 cup sun dried tomatoes, thinly sliced
3 cups sliced mushrooms
1 tbsp red wine vinegar
2 tbsp basil , chopped
1/4 cup shredded parmesan cheese
12 oz extra wide egg noodles

Recipe Directions for Chicken with Sundried Tomatoes

  1. Prepare egg noodles.

  2. Heat 2 tbsp of the oil in skillet, cook chicken until browned on each side then remove from skillet. Add remaining oil, cook shallots about 2 minutes then add water, soup, tomatoes, vinegar, and basil--stir then add in chicken. Bring to a boil and simmer about 5 minutes or until chicken is cooked through.

  3. Serve over egg noodles. Sprinkle parmesan on top.
