Recipe Ingredients for Chicken and Summer Veggie Stir Fry

1 breast, bone and skin removed Chicken, Breast, Meat Only
2 cup, cubes Eggplant
1 small Squash, Summer, Zucchini, Includes Skin
1 Medium(85 g) Tomatoes
2 cup chopped raw Yukon Gold Potatoes
0.5 cup chopped Red Onion
2 tbsp Extra Virgin Olive Oil
5 leaves Basil, Fresh
1 tsp Marjoram, Dried
3 tbsp Vinegar red wine
1 tsp Sea Salt
0.25 tsp Pepper, Black

Recipe Directions for Chicken and Summer Veggie Stir Fry

  1. Cut potatoes, zucchini, eggplant, and onion into quarter-slices.

  2. Put 2 tbsp olive oil, chopped basil, and marjoram in a small bowl with 1/2 tsp sea salt and mix together.

  3. Cut chicken into strips and rub on olive oil-herb mixture. Season with pepper.

  4. Saute potatoes over high heat until lightly browned. Remove from heat onto plate.

  5. Brown chicken in saute pan. Add onion, zucchini, and eggplant and cook until zucchini is bright and some pieces are browned. Add potatoes back to the pan and cook everything until potatoes are soft.

  6. Sprinkle over with red wine vinegar and cook for one minute. Check salt/pepper seasoning before serving.
