Sauteed summer veg and diced chicken breast in a light tomato sauce. Great over pasta or rice. Recipe makes 10, 1-cup servings

Recipe Ingredients for Chicken and summer vegetable sauce

2 tbl olive oil
0.38 lbs yellow squash (1 medium)
0.42 lbs zucchini (1 large)
1/2 lbs sliced white mushrooms
3/4 cup sliced onion
6 cloves garlic
28 oz diced tomatoes
9 oz chicken breast, cooked and diced
1 tsp salt
1/2 tsp pepper
1 tsp oregano

Recipe Directions for Chicken and summer vegetable sauce

  1. Heat oil over medium flame in a heavy-bottomed saucepan. Add onions and garlic and saute until slightly soft.

  2. Add zucchini and yellow squash, and saute until softened. Add mushrooms and cook, stirring until lightly browned. Add all remaining ingredients, and stir.

  3. Lower heat and simmer while preparing rice or pasta.
