Yummy!! Just threw together some things I had in the fridge and it came out really good! I used 3 small chicken tender fillets.

Recipe Ingredients for Chicken w/ Summer Squash Pasta Sauce

1 zucchini, thinly sliced
1 small summer squash, thinly sliced
2 cloves garlic, minced
1 pint grape tomatoes, halved
3 tablespoons grapeseed oil, divided
4 oz chicken breast tenders
1 tablespoon paprika
1 tablespoon italian herbs
1/8 cup parmesan cheese, shredded

Recipe Directions for Chicken w/ Summer Squash Pasta Sauce

  1. Place chicken tenders on a small plate and sprinkle with paprika. Set aside.

  2. Heat 2 TB of the oil in a cast iron or large skillet. Add zucchini and squash and stir to coat. Add garlic and herb seasoning. Saute about 4-5 minutes or until squash is becoming tender, but not soft yet. Remove from pat with slotted spoon and set aside.

  3. Add remaining tablespoon oil to skillet and heat. Pan-fry chicken tenders in oil until they are cooked through, about 6-10 minutes depending on thickness, turning to brown both sides.

  4. When chicken is about done, add tomatoes and saute around chicken until they begin to soften. With a potato masher or fork, coursely mash tomatoes to release juice.

  5. Return zucchini and any juices to pan. Stir to combine, scraping up any brown bits from the pan, and sprinkle with cheese. Let heat for another minute or so as cheese melts.

  6. Serve over hot cooked pasta, sprinkled with a little more cheese.
