In Japan, sukiyaki is cooked at the table and served with individual bowls of rice. You can do this using an electric wok or frying pan. From the American Diabetes Association. Recipe Ingredients for Chicken Sukiyaki

2 sprays cooking spray (4582)
1 lb boneless, skinless chicken breasts, cut into thin strips (108899)
2 cups shiitake mushrooms, sliced (95616)
1/2 cup butternut squash, peeled and diced
1/2 cup low sodium soy sauce (16424)
1/2 cup honey
1/4 cup sherry (14106)
1 cup water
1 medium zucchini, about 2 inches in diameter, cut into 1/4-inch slices
3 cups kale or mustard greens, chopped
4 green onion, cut into 2-inch pieces
90 g (2 cups) bean sprouts (79924)
1 tsp grated fresh ginger root

Recipe Directions for Chicken Sukiyaki

  1. Spray large electric skillet or wok with cooking spray. Saute chicken over high heat until no longer pink, about 5 minutes. Remove if using skillet, or push to one side if using wok.

  2. Spray, add mushrooms, and cook 5 minutes. Remove or push aside. Spray and add squash. Mix soy sauce, honey, sherry, and 1/2 cup water and pour over squash. Bring to a boil, lower heat, and cook until tender.

  3. Spray and add zucchini, kale, green onions, and bean sprouts. If too dry, add a little water. Cook 5 minutes. Add ginger and toss well. Cook 1 minute. Spray and add chicken and mushrooms. Mix well. Serve from the wok or frying pan.
