Recipe Ingredients for Chicken Style Seitan

3 cups gluten flour
1 cup whole wheat flour
1/2 cup minute tapioca
3 tbsp yeast flakes
3 1/2 cups hot water
2 tbsp low sodium soy sauce
4 tbsp yeast flakes
1/2 medium onion, chopped
10 cups water

Recipe Directions for Chicken Style Seitan

  1. Mix first four ingredients and chicken flavored vegetarian broth powder or crushed cube.

  2. Mix hot water and soy sauce, adding all at once quickly.

  3. Mix slowly until dough-like. Let sit for 15 mins.

  4. Make broth with remaining ingredients plus more dry broth and bring to boil.

  5. Cut gluten into 4 pieces.

  6. Place in boiling water, cover, and turn down to simmer.

  7. Simmer for one hour.

  8. Remove from heat and allow to cool.
