Recipe Ingredients for Chicken and Stuffing Casserole

1 1/2 pound chicken breast (uncooked)
14 oz Cream Of Chicken Soup, Campbell's 98% Fat-Free
14 oz Cream Of Mushroom Soup, Campbell's 98% Fat-Free
1 cup margarine
6 oz Stove Top Stuffing Mix Chicken Flavor
1/4 cup Land 'O Lakes Butter with Canola Oil

Recipe Directions for Chicken and Stuffing Casserole

  1. Simmer chicken in water to cover for 45 min. to 1 hour. Reserve liquid, cool and remove fat if there is any.

  2. Cut chicken into bite size pieces and layer into a flat baking dish which has been sprayed with PAM.


  3. Mix soups and sour cream and spread over the chicken.


  4. Make low sodium stove top dressing as directed, using 2 cups of the reserved broth instead of water.

  5. Flavor it with extra 1 tsp. poultry seasoning and 1/2 tsp. thyme and 1 tsp. sage, in addition to any spices included with the mix.


  6. Spread over chicken in a 13 x 9" casserole dish and cover. Use foil lined with parchment paper, if necessary. 



  7. Bake 35-40 minutes in 325 degree oven.
