Delicious, Healthy Chicken Stoup, not thick enough to be a stew, but not thin enough to be soup!

Recipe Ingredients for Chicken Stoup

2 chicken breast
15 oz Crushed Tomatoes
2 stalks Celery
1 cup carrots
1 cup brown rice
1 medium onion
3 cloves garlic
32 oz chicken stock
1 cup broccoli
1 tablespoon olive oil

Recipe Directions for Chicken Stoup

Heat olive oil in a skillet, sautee onion and garlic approx 5 minutes. Stir in carrots and celery, let sautee for about 5 minutes, add raw chicken and half cook through (it will finish cooking as it simmers). Add chicken stock, crushed tomato and broccoli, bring to a boil. Once boiling, reduce heat to low and let simmer for about 1 to 1.5hrs. Add rice about 20 minutes before taking off stove.
