I like to make this when I have veggies that are about to go bad. You can change up the veggies, and throw in whatever you like! I adapted this recipe for me from the Biggest Loser Cookbook. It was very very good!

Recipe Ingredients for Chicken Stirfry

11 1/2 oz raw chicken, diced into 1 inch cubes
1 3/4 cups green peppers, diced
1 cup carrots, sliced
2 tablespoons Olive Oil
1 cup frozen peas
2 cups frozen broccoli
2 egg whites
1 cup brown rice, uncooked (dry)
5 teaspoons Lite Soy Sauce
3 teaspoons Spicy Stir Fry Sauce

Recipe Directions for Chicken Stirfry

  1. Mix together soy sauce and stir fry sauce in a small bowl, set aside

  2. Cook rice according to package directions, set aside

  3. Heat a wok or large skillet over medium high heat. When it is hot enough to sizzle a few drops of water, add the olive oil

  4. Add the chicken, cook (stirring frequently) for 3-5 minutes on each side, until chicken is no longer pink. Remove from pan, set aside, cover to keep warm

  5. Add carrots, broccoli, and peppers to pan. Stir cooking until just tender, but still crispy about 2-3 minutes.

  6. Stir in rice and peas, cook about 2-3 minutes

  7. Make a well in the center of rice and veggies. Stir in egg whites. Stirring rapidly to mix eggs in. Cook 3 minutes.

  8. Stir in chicken and sauce mixture, stir together about 2 minutes until hot.

  9. Divide into 3 equal portions and enjoy!
